OK, here goes with the answers...<br /><br />1. 2 hours can be deadly in the summer heat, I would recommend that you travel with it very cold - look up Liz Marek's "Box Cooler" instructions and make a cooler/box to help insulate that coldness. Also, make sure you use plenty of supports + a center master dowel. Also, I would definitely recommend a "day of" delivery. Most people are not going to have proper refrigeration to get that cake nice and cold again for those 2 days. If they do put it in a fridge with onions - BAM! Now your cake taste like onions. Not good, too much to go wrong!<br /><br />2. The amount of icing you use depends on how heavy-handed you are with the icing. I like to use a lot so I would estimate 3 batches for that cake, but it also depends on how high your tiers are too. My tiers run anywhere from 5 to 6 inches high.
