Safari Animal Birthday Cake

We create so few birthday cakes these days that when we get to make one, we tend to go a little overboard.   The cake is really a basic design to be a backdrop for the real stars, the animals.  I added a small piece of styrofoam to lift the top tier so I could have a place to hang the vines.   It really is best for the sake of stability.

We marbled a little fondant for the waterfall  and disguised the source with fondant rocks.  As a side note, if you want some AWESOME looking candy rocks and boulders that are solid chocolate covered in a candy she'll, check out Nuts.com.  I love these people, their almond flour and their cute packaging.
 

There are a million animal tutorials out there, so I can't add much new in that department.   The most important thing to remember is to add tylose to your fondant and let it sit up a while. This step will make your animals not  be droopy or melty looking.   Another tip is to add a little "makeup" to your animals. A little touch of blush will make your animals "come to life"!  Also, if you get the basic way of making an animal, you can search Etsy for an "elephant" and take some inspiration from a greeting card, stuffed animal or most anything.  If you are selling a cake with animals, you should allow about two hours to make each animal.  I'm just saying, don't start the animals at 8pm the night before the cake is due.  Happy animal making!

Sweet Sixteen Birthday Cake

This past weekend I made the cutest sweet sixteen for a young woman in Chattanooga.  I worked closely with her Mom to get a list of all her favorite things so we could surprise her with this grand birthday cake!

Our birthday girl is on the rowing team, so I made a replica of her rowboat in her school's colors.  The rest of her cake followed a salmon and turquoise color scheme.  Does anyone besides me have a problem mentioning salmon and cake in the same sentence? ;-)

I made her favorite shopping bag, and even a set of car keys, something every s16 year-old wants, but I had the most trouble with the birthday girls' pup!  I initially starting molding the dog using Fondarific modeling chocolate, but I had to scrap it.  It was just a little too wilty and wouldn't hold its shape the way I wanted.  I made a quick batch of real modeling chocolate and that worked much better.

Golden Globes Red Carpet Birthday Cake

 I really love award season! The dresses, the hair, the jewels and oh, the awards. It all starts tonight with the Golden Globe awards! I got a last minute birthday cake request from a favorite long time customer. I was so happy she wanted a cake to match her Golden Globes party theme! I was asked to include the "Happy Birthday..." Inscription and use a red and gold color scheme. The cake was supposed to be a simple 9" round, but when I realized it was Mary Margaret's 16th birthday, I had to do more.

I choose an oval cake so that I had a flat front for the carpet to be draped. I made the stars out of a golden/spice mustard color and just painted the front with a gold glaze to make them sticky. I then sprinkled lots of edible gold disco dust. You could also do this by wetting the stars with a little bit of water so they are tacky.

The film was all Fondarific. I made a big round middle and made a ribbon of black with some side detail by using a ticking wheel . I cut a few squares out of ivory and drew some squiggles to add a little details. The Fondarific helped because of the added work time,I was able to manipulate the "film" so that it didn't crack and break.

For the spotlights, we just used black modeling chocolate and used a large diameter dowel to hollow out a space to drop the light inside. We let this firm up a little and cut a hunk off the bottom so they sit at an angle. We added a few strips and various poked holes for a little detail. I thought it was a cute, small way of adding some fun into this red carpet ready cake!

Pearl Encrusted Wedding Cake

With this cake I think I may have beaten some sort of "most dragees on a cake" record.  This cake was designed using several inspiration photos the bride provided during our consultation.

I really liked the softness and texture that the various sized sugar pearls added to the design.  When it was finished it reminded me of a winter themed cake

Getting all those dragees on the cake was actually easier than I thought it would be.  I placed each tier on a smaller inverted cake pan, and then placed that smaller cake pan into a very large cake pan.  I would take a handful of mixed size dragees and apply them to the sides of the cake.  The ones that didn't catch would just collect in that larger cake pan for me to scoop up and use again!

Glitter Monogram Wedding

This is one of those cakes where I curse at my lack of photography skills.  This cake was SO pretty and elegant, but the picture just don't do it justice.  Let's start with the bottom tier!

I have had lots of requests lately for pleated fabric look swags, and I am finally getting the hang of them.  The bow and brooch matched the bride's dress.  I really like it when I can incorporate elements from the dress into the cake.

The next tier up looks plain in the picture, but if you click and get a bigger look, you might be able to tell that the whole tier was done in a tone-on-tone hounds tooth pattern.  The bride was a big Alabama fan and we thought this would be a great way to present that element elegantly on her cake.  I used a stencil on the cake and the effect was really nice, but not so much in the pictures!

The next tier up is just fondant stripes.  Not much to see here ;-)

The top tier I was the most proud of.  The bride wanted a glitter monogram.  I again used a buttercream stencil to make the initial monogram and then with the stencil still on, I sprinkled on the glitter dust.  If you can tell in the close-up picture, the glitter did run a little, but the effect was really awesome.

Much more awesome than this picture would lead you to believe  huff! :(

Hoppy Easter!

So, what happens when you give a couple of cake artists a dozen eggs and some spare time?!?

Yep!  Tie-Dyed Glitter Eggs!  We had a blast making these little suckers!  After dying them, we got out ALL the luster dusts and edible glitter and just went to town!  My personal favorite was the golden disco glitter egg (look to the middle right in the picture).  It's been forever since we made Easter eggs and for the life of me, I don't know why!

Once that excitement wore down, we thought we would enjoy a cookie break, so we broke out a package of Milano cookes.  30 minutes later...

Yes!  Milano marshmallow sheep!  We're sickos, OK!  But in case you're interested, here's the lowdown on making these cute little guys!  Coat a Milano cookie in white chocolate and cover in  marshmallows.  Once set, use more chocolate to glue on four "feet" (we used some sort of Reeces egg candies).  Now take another milano cookie and using your mini marshmallows, make eyes and ears.  Use more chocolate to glue the cookie head to the cookie/marshmallow body.  Viola!  These little guys will serve as plate decorations / possible dessert for our guests today as we serve Easter lunch!
